Nancy: this restaurant has lost its star in the Michelin Guide, its chef says he is incomprehensible

A Nancythe bad news fell on March 22 for Patrick Fréchin, chef of the restaurant Transparence, located 28 rue Stanislas: the Michelin Guide has decided to withdraw his star for 2022.

“It’s never pleasant to see that we have been sanctioned”

The restorer entrusts to Lorraine News that “it is never pleasant to see that one has been sanctioned. The difficulty is knowing and understanding why”.

However, Patrick Fréchin is unaware of what displeased the jury of the Michelin Guide: “It is perhaps because of a cooking or a failed seasoning? he wonders.

The head of Transparency, who received his first star in 2018, remains unclear. He is waiting to digest the news and plans to write to the Guide to ask for answers.

“It’s a bit like at school, they tell you why you’re not good. That way, you can improve yourself”, illustrates the restaurateur.

“I can’t find a sommelier”

Starred or not, the chef restaurateur agrees to question himself. In his establishment, all the reception rooms were renovated in January. “There was 30,000 euros worth of work,” emphasizes Patrick Fréchin.

When asked about the points to be worked on, the chef replies in complete transparency: “I think that we can improve the service a lot because I have a young and organized team but not always at the top of professionalism”.

In addition, the restaurateur mentions difficulties in recruiting staff: “I can’t find a sommelier. I’m not saying it’s the cause but just a hypothesis.

“Fresh quality and local products”

“I’ve been doing this job for 30 years, I cook only with fresh, quality, local products,” emphasizes Patrick Fréchin.

Since learning of the loss of his star, the restaurateur says he has received “a lot of messages of support from colleagues and customers”.

Dressed in his chef’s apron, he swears that he will continue to exercise his profession with passion and hopes that the Michelin Guide will once again reward his establishment.
