Frenchman Daniel Boulud, based in New York, voted best restaurateur in the world

In the world of gastronomy, there are many awards and rankings, but here is one that French chef Daniel Boulud should savor. Installed for nearly 30 years in New York, this Lyonnais of origin was consecrated Monday best restaurateur in the world for his restaurant “Daniel” (two Michelin stars), announced the association Les Grandes Tables du Monde.

Arrived in New York in 1982, he “embodies all by himself, for many North Americans, French gastronomy, even gastronomy in general”, notes in a press release the Association created in 1954, which today brings together 184 establishments in 25 countries on five continents. Daniel Boulud, who defines his cuisine as French in its cooking and textures, but with American products and flavors, also has other restaurants in the United States, Canada, Dubai, Singapore and the Bahamas.

Monovarietal and cannolo

In the category of best sommelier, the Argentinian Sergio Calderon, working with Michel and Sébastien Bras at the “Maison Bras” in Laguiole en Aubrac (Massif Central), was elected. It was he who selected the wines for the new Bras restaurant in the Bourse de Commerce Collection Pinault in Paris. Many bottles he retains are single varietals, “wines at affordable prices and easy to interpret”, he explained in May during the restaurant’s inauguration, assuring that “label drinkers” were “confused “. Self-taught who arrived at Maison Bras in 1990, he was rewarded for “his very free approach to wine, without preconceived ideas, without prejudice”.

The prize for the best pastry chef was awarded to Italian native of Sicily, Giuseppe Amato, from the restaurant “La Pergola” in Rome (three Michelin stars). The latter highlights citrus fruits and offers a starred version of the famous Sicilian cannolo, also indulging in more daring experiments by combining raspberry and Java pepper.

Finally, the prize for the best dining room manager is awarded to Jenny Yun of the “Manresa” restaurant in Los Gatos, California.
