Macroalgae as a source of protein in lettuce or microalgae as a natural coloring agent in food – in the new episode of the podcast “NutritionPlus”, the foodcast of the German Food Association, algae expert Kirstin Knufmann explains why algae are the protein alternative of the future, and which essential micronutrients they make vegan contain living people and why they are relevant not only to human health but also to the climate.
