Sommellerie at Ker Lann
Then, sommelier friends introduced him to the art of wine.
“I obtained a fine mention in sommelier from Ker Lann and later, the one who was my mentor and great sommelier Gaylord Robert, suggested that I go very far. He recommended me to a friend of his, Eli Zabar, extremely famous, who runs a supermarket, a florist, a wine cellar, a personal cellar of 40,000 bottles in New York, two restaurants, a wine bar, a beer bar, bakeries and a rooftop with gardens. All this on the Upper East Side of Manhattan. After three interviews, I moved there. “
Killian Robin was then 21 years old. After a year, he returned to France to renew his visa and returned to Uncle Sam’s country to become head sommelier, restaurant and wine bar manager!
“In a few years, I learned a lot about New York with fabulous encounters. But the talented and ambitious young man is not at the end of the adventure.
One of the most beautiful cellars I have ever seen
A few months ago, when the Covid landed, he left the USA, found his family, then left for a while to discover the vines and winegrowers of the Lyonnais region.
After a few days in La Guerche, he took the plane to cross the Atlantic to join Eli’s Table.
“A famous restaurant but also very unusual and that’s what is interesting. So it is one of the most beautiful cellars I have ever seen, and it is an honor to have the management. And then I have dreams. Without a doubt, one day they will return to open something in Rennes. But first it will be Japan. Perhaps more directly on wine than in catering because I fell in love with visiting this country. We’ll see. “
Killian is not yet 30. And this masterful course does not make him lose his mind. Especially when he comes home.
“Going back to basics with people who have not necessarily seen big cities makes me feel humble and allows me not to be confused with what we are not. The first few times I felt a bit in another universe, as if people weren’t living at the right pace. I was wrong, the little moments when they are surrounded by those we love should pass even more slowly. Here, we feel calm, less stressed, it feels good. “
The young man does not forget his parents, Valérie and Jean-François Robin. “They have always been there to support me, no matter what, at all times. And my little brother, Johan, and my little sister, Ilona, have always followed me. ”
