Coarse mashed ingredients:

  • 3 large red chilies
  • 5 pieces of curly red chili
  • 2 cloves of garlic
  • 6 red onions
  • 1 teaspoon shrimp paste, burned

Material:

  • 500 grams of white rice
  • 1 piece of chicken thigh top and bottom, boiled, fried, shredded
  • 3 pieces of cabbage, roughly chopped
  • 1 spring onion, cut 1/2 cm
  • 2 eggs
  • 2 tablespoons of sweet soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 1/2 tablespoons fried onions for sprinkling
  • 3 tablespoons oil for frying
  • 3 scrambled eggs

How to make kampung fried rice:

1. Saute the coarse spices with a little oil until fragrant. Set aside.

2. Cook scrambled eggs, add white rice, sauteed coarse spices, sweet soy sauce, salt, and sugar. Stir well.

3. Add shredded chicken, cabbage, and spring onions. Cook over high heat until all the spices are evenly distributed.
