Sonia Guillou launched last June in Layrac her 100% vegan sushi catering activity, gluten-free, free from animal or dairy products, or fish. A concept developed in 2020 by two of his friends Samuel Youk and Tristan Bach who respectively opened their brand and commercial brand “Veggie Sushi” in Marmande and Angoulême.
After having worked as a hospital worker in a retirement home in Agen, Sonia, mother of a little Yuna, took advantage of her parental leave last year to think about her future: “It is Tristan a former Agenais that I I have known for a long time who offered me to join them in the Veggie Sushi adventure and he trained me in vegan sushi. The three of us meet regularly to share ideas and new recipes “.
At the end of spring, the young woman started with the markets in Layrac on Friday and in Le Pin on Sunday morning and since then she has added the catering activity to order and free delivery in the agglomeration of Agen.
The strength of this type of sushi is that it fits the diet for vegetarians, pregnant women and those with gluten intolerance. But the added value undoubtedly lies in the marriage of flavors and the explosion of tastes in the mouth. For those who are a little weary of the traditional makis, sushi and California rolls with endless tuna, salmon and avocado, this is the original and delicious solution.
Beetroot, raspberry and mint cream, or even a combination of ginger mint, candied lemon cucumber and dill cream, spicy carrot hummus, dried apricot hummus zucchini, are part of the spring summer menu.
Sushi changing with the seasons
The proposals are revisited with the change of seasons. For the fall, the new sushi, maki and california menu is about to be tested and marketed. Golden ball turnip, curry-coconut sauce, coriander, flax seeds, pumpkin, dried sunflower flowers, tofu with wild garlic, sautéed carrots with garlic, kimchi, sprouted seeds, granny apple, celery, Roasted shiitakes in sesame oil will be presented with brio and balance. “The vegetables are marinated, grilled, spiced with an assortment of condiments. The cream is made with soy yogurt which is more digestible. We work with quality suppliers for the rice vinegar and soy sauce that is gluten-free and less sweet. “, explains Sonia. The “discovery” platters with an assortment of flavors are available from 14 euros. You must order at least 4 hours before delivery to 0 667 336 207, the ideal being the day before. “Veggie Sushi” operates Friday through Tuesday with peaks on weekends. Deliveries guaranteed from 5 pm to 9.30 pm Sonia breaks on Wednesdays and Thursdays. It is present at the Layrac and Pin market in Agen.
