The concept of the Asian canteen Santosha born in Bordeaux with Emmanuel Meuret is developing and should have 20 addresses by September, especially in the region.
It was in 2007, in Bordeaux, that Emmanuel Meuret inaugurated his first street food restaurant, his first Asian canteen Santosha. The concept defended by this young Bordeaux entrepreneur was that of a responsible establishment both on the plate and in the dining room.
On the plate: fresh and local vegetables, meats of French origin, prepared and processed on site by the teams and adapted to all diets (vegetarian, gluten-free, etc.).
In the dining room: above-market salary levels and a strong identity with a color code of yellow and green, white tables and mismatched vintage chairs. Another component of Santosha’s DNA, defended from the start by Emmanuel Meuret: take-out which already represented, before the Covid crisis, 25% of the activity.
20 restaurants by summer
It is with this philosophy that Santosha has made children since 2017 by first opening five branches in Toulouse, Nantes, Lyon, Pessac and Talence, before launching its first franchise in Angers in 2019, then a second in Levallois-Perret. . And despite the Covid health crisis, the appetite for Asian street food has not dried up, with seven new openings since January 2021 including Cenon and Biarritz. Before summer, Santosha will have five additional restaurants and three pop-up outlets. The establishments will see the light of day: in Mérignac, Hossegor, La Rochelle, Massy and a second address in Lyon. Santosha will then have 20 restaurants, mostly owned (nine franchisees), with the ambition to increase the development of franchises throughout the country.
Ephemeral addresses on the coast
In addition, from June 15, a food truck will take up residence in Claouey from Friday to Monday (from 3 p.m. to 11 p.m.) and will take a tour of Lacanau on Wednesday, every other week, at the campsite market from June 20. Finally, an ephemeral restaurant will open its doors at Le Porge, at the Pastourelles campsite, from June 20.
