Cold Cheesecake With Fruit

Ingredients:

  • 150 grams of round biscuits,
  • 350 grams of cream 30%
  • 1 kilogram of cottage cheese from a bucket,
  • 3 tablespoons of powdered sugar,
  • 5 teaspoons of food gelatin,
  • 500 grams of fruit (for example, strawberries, raspberries, blueberries, blueberries),
  • 2 packets of fruit jelly.

Preparation:
Prepare fruit jelly according to the instructions on the package and set aside to cool.

Put baking paper at the bottom of the springform pan. Then place the biscuits on the bottom of the pan so that they fill the entire space.

Whip the 30% cream until stiff and set aside in the refrigerator. Put the curd cheese, powdered sugar into a bowl and mix the ingredients. Dissolve gelatin in 6 tablespoons of water, but do not boil it. Add 2 tablespoons of cheese mass to the dissolved gelatin and mix dynamically until the ingredients combine. Then add the rest of the cheese mass and the 30% whipped cream. Mix all ingredients thoroughly.

Cut the strawberries into thicker slices. Place half of the cheese mass in the cake tin on the sponge cakes. Then place the strawberry halves on it and add the rest of the mixture. Put the mold in the fridge for 1.5 hours.

When the cheese mass has solidified in the refrigerator, place the rest of the strawberry slices on it. Then pour the prepared jelly into the mold.

It’s best to leave the cold cheesecake in the refrigerator overnight to let it solidify properly.
