Ingredients (doses for four people)

  • to taste seed oil;
  • 300 g of cauliflower;
  • 250 g di farina 00;
  • 5 g of brewer’s yeast;
  • 1 egg;
  • q.b. sale.

Procedure

  • Boil the cauliflower.
  • Drain it and remove excess water with the use of a colander.
  • Take a bowl in which to mix flour, water and yeast.
  • Mix and incorporate the egg and salt.
  • Proceed until you get a homogeneous batter.
  • Pour the boiled cauliflower into the bowl and mix again.
  • Cover the container with cling film.
  • Leave to rise for about 2 hours.
  • Remove the film.
  • Heat some seed oil in a saucepan.
  • Take the batter and shape it until it takes the shape of a pizzella.
  • Repeat the process until the dough is finished.
  • Put the batters into the pan two by two and brown them.
  • Turn them often during browning.
  • Cover a plate with absorbent paper and place the pancakes now ready. There is no need to wait for them to cool. On the contrary, they can be enjoyed both hot and cold.
