Pascal Toussaint, Master artisan baker, had already known how to awaken the taste buds of Dijon with his homemade bread. But one day he decided to make a different gingerbread.
He follows his intuition and above all chooses unique ingredients: fragrant honey from Jura, rye flour and fresh butter from Normandy, a balanced blend of spices. All baked in its wooden mold, hence its name: “Toussaint spice cake”. He makes his creation taste around him, and there, the opinions are unanimous! Everyone is under the spell. His new creation? A original gingerbread, much smoother than its classic version, “balanced on the palate” flavors and personality.
A spice cake that goes around the world
The consecration comes when he wins the First Prize of the Gingerbread Competition organized by a Confrérie Dijonnaise, in 2008, which has a jury of 500 gourmets.
In front of this masterpiece which won the gold medal, the wife of Mr. Toussaint decided to offer it in Paris in the big houses. First in the cheese factories then the delicatessens. Success is immediate! And in trade shows, orders flow from Canada, Switzerland, to Iceland, Austria, Hong-Kong …
For 15 years, Mr Toussaint’s recipe has toured the world and the taste buds to delight gourmets.
A treat that holds other surprises
For dessert, with coffee or tea, for breakfast for young and old, it offers a resolutely tender and gourmet moment. The original (440 gr) is available in 240 gr versions with inlays: candied orange and lemon, all dried fruits macerated in rum, or even AOC walnut kernels from Grenoble.
Mr Toussaint continues his momentum and creates another gingerbread, which can be toasted.
You just have to grill the slice and garnish it with cheese or foie gras… A treat!
