Gault & Millau awards 2 toques to the restaurant La table d’Émilie

La table d’Émilie has just joined the closed circle of chef tables recognized by the famous Gault & Millau guide. Two toques and a score of 13 for cuisine made with impeccable products cooked by a talented chef. A great achievement for Thomas Sanvoisin who is making Marseille gastronomy shine for the first time at this level.

When the young chef moved to Marseillan in 2018, he already had a solid background and studied at the Barbacane, a prestigious Michelin-starred restaurant in the city of Carcassonne. After a few stops in Savoie, it was by chance that one day he met Daniel Boulenc who for 32 years brilliantly held the reins of this illustrious restaurant in the heart of Marseillan, birthplace of the poet Achille Maffre de Baugé. A historic and warm setting, a listed door which invites you to discover a vaulted room with original stones opening onto a patio of the most beautiful effect. The chef is seduced as much by the place as by the town which welcomes him warmly with his partner Emy.

The establishment has since offered inventive cuisine, made from fresh, seasonal products, favoring regional producers as much as possible. Thomas Sanvoisin does not delegate the search for his products; he chooses them himself on the markets and from local producers based on criteria of quality, proximity and freshness. 85% of the wines offered on the menu also come from Languedoc-Roussillon. The chef favors signature products such as sweetbreads, fish and even shellfish such as lobster or Carabineros shrimp.

A close-knit team works around the chef to concoct the 60 dishes daily. His partner Emy, pillar of the back office, an inventive pastry chef who thinks outside the box, Romain Bellamy and a maître d’ Christophe Jeunot who has been his right-hand man for eight years now. A deserved recognition that carries high the colors and reputation of the municipality
